Abstract

                 This paper highlights the region's rural sites and explores the archaeological remains of old olive oil and grape presses in Roman Rusicade ex Skikda, placing them within the context of Roman agricultural policy in the African provinces. Analysis of those processing facilities and the related monuments provides identification of the prevailing peasant economic activities and understanding of the character of rural life during that historical period.
